Orcas Pear w/ Bay Spoon Preserves
Known as The GOAT ("greatest of all time) by our favorite cheese shop customers.
At the height of ripeness these local delicacies (discovered growing wild on Orcas in the 1970s) cook beautifully into a rosy preserve, with notes of ginger from our fresh kitchen garden grown bay leaves.
A sweet little treasure of Orcas' agricultural history, these pears are the perfect example of a 'roadside' tree adapting itself perfectly to the island climate. We're proud to be stewards of this delicious pears future (Grow more, people! Grow more!).
Highly versatile, this preserve is a gorgeous topping to panna cotta and cheesecake, and adds a sweet, lightly herbal note to cheese pairings and charcuterie boards. We adore it with Cypress Grove's Humboldt Fog or slathered between a wedge of brie, wrapped in puff pastry, and baked. But don’t be afraid to get crazy and deglaze a pork chop with it too.
