Shiro Plum w/ Mint Spoon Preserves

The most decorated jar in the line. One of our very first fruit preserves, this surprising jam needs little introduction. When the lone farmette Shiro plum tree yielded 150lbs of plums that first season, Audra thought: "that's a lot of pies!" coming from a pie making tradition via her Polish grandfather, and promptly bought a copper pot and taught herself to preserve. A little magic, and lot of stirring later, the rest, as they say, is history.
We love the brightness of this Asian varietal, Shiro – and find it pairs fabulously with mint, freshly picked from our kitchen garden. Inspired by a patch up mint growing wild by the Shiro tree- what grows together does indeed, go together.
This plum jam vies for most versatile – awesome with toast, excellent with cheese, and perfect for anything you’d use a mint jelly on (pork, chicken, or lamb). For an inspired cheese pairing, serve this jam alongside goat cheese, or gussy it up with a little prosciutto for a perfect charcuterie pairing. Serve straight from the jar with pork or lamb chops. Go nuts! Reduce wine, butter, shallots, add half a jar plus a pinch of salt and glaze a few duck breasts during the last five minutes of cooking.
