Homemade ricotta, orgasmic Orcas Pear with Bay Preserves from Girl Meets Dirt , pistachios, rose petals, and black pepper

- 4C whole milk (make sure it’s non-UHP!)
- 3T lemon juice
- pinch salt
Need: saucepan, cheese cloth, sieve, & a large bowl
Line the sieve with the cheese cloth and set over the large bowl.
Heat milk in the saucepan until it starts to foam. Whisk constantly to prevent burning and don’t let it boil. Add the salt and lemon juice and let sit for 10 minutes.
Scoop out the large curds, then pour the rest through the sieve. Let drain for at least 5 minutes, and up to overnight.
Eat ASAP, or up to 3 days
